Sauced 5-Spice Tofu w/Sun Dried Tomatoes & Cauliflower
This tempting dish is easy 
to assemble and delicious. Serve with Pungent 
Basmati Rice.

1 cup halved sun dried tomatoes
1 1/3 cups boiling water
1 1/2 tsp. olive oil
1/4 tsp. crushed red pepper
1 cup chopped onion
6 cloves garlic
1 Tbsp. grated gingerroot
1/2 cup chopped red bell peppers
(1) 6 oz. pkg. Five Spice Baked Tofu, sliced 
1 med. head cauliflower, broken into florettes
1/4 cup Mirin
6 lg. basil leaves, snipped
1 Tbsp. Bragg Liquid Aminos
1 Tbsp. cornstarch
2 Tbsp. water

Steep sun dried tomatoes in boiling water and set aside. In a medium saucepan, heat olive oil and crushed pepper over medium high flame,1 minute. Add the next 4 ingredients and saute 3 minutes. Add tofu and saute 3 minutes, stirring frequently. Add cauliflower and saute 3 minutes. Add Mirin, basil leaves, and Bragg Aminos. Lower heat and simmer 10 minutes, stirring frequently. In a small bowl, blend cornstarch and water. Add to saucepan and simmer 5 minutes, or until ready to serve, stirring occasionally.

Pungent Basmati Rice
Basmati rice is delicate and aromatic, the grains elongate as they cook, and are enhanced by fragrant Indian spices.

1 cup Basmati rice, rinsed
2 1/2 cups boiling chicken flavored vegetarian broth
1/4 tsp. turmeric
1/2 tsp. ground Coriander

Place rinsed rice in the boiling broth, stir and bring to a second boil. Stir, add remaining ingredients, reduce heat, cover and simmer for 20 minutes undisturbed, or until liquid is absorbed. Serve immediately.
